Evaporative cooling works in low humidity. I wonder just how low the temperature gets in that inner pot. Other ways to preserve are canning, fermentation, salting, pickling. Some foods, like coconut oil and honey, keep for long periods at room temperature. Dried beans, rice, seeds, and fruits can keep well too.

Same principle as my "Butter Bell" which is used by packing the smaller container with butter, filling the outer cover 1/3 of the way with water and then inverting the smaller container into it. You change the water every other day and the butter should keep for up to a month.
