@Patriot Horse An easier way to do the dill vinegar other than doing the whole kombucha process would be to simply take leftover wine and put in some dill, stems and all, cap and let sit for a couple weeks. It may get murky creating a "mother" but not to worry. Scoop off any blobs and strain using a cheesecloth for clarity if you'd like.

@Patriot Horse First you need to make the tea but will need a "scoby" or "mushroom" as it's called. It's a cellulose mass of yeast and bacteria. What happened with me is that I didn't bottle one container of tea when it was ready "fermented" and it turned to vinegar. I simply added dill weed to some and that was basically it. Making kombucha is not for everyone. In fact, someone talked me into it a couple years ago. It's a probiotic just like kefir is which I also make. If you think you'd be interested in making it, let me know and I will send a direct message your way with more info.

@ThorAxe I wish I had a list of the safe balsamic vinegars. At least I know I can trust my Kombucha Dill Vinegar that I did myself.

@B Saw your recipe for Pennican. I think it's interesting and I would try it but will need to order an Excalibur dehydrator. I do know that contrary to what folks believed in the past about rendered fat (pork) it has similar qualities to avocado oil which we all know is a good thing. Wonder how the mix would taste - very curious and it sounds like a good food source to have on hand. I would think most people would only have one or two spoons of it at the most.

Good site you have here Carol.  Has anyone tried a smoothie with an avocado pit?  The pit is loaded with antioxidants so don't throw the pit away!
