This oil is a great addition to pizza bases and pasta sauces. It also makes a tasty salad dressing base.

Ingredients
  • 600ml / 1 pint olive oil
  • 5 sprigs oregano, fresh - flowers can be included if wished
  • 2 garlic cloves, peeled
  • 8 green peppercorns, whole
  • 2 bay leaves
Steps
  1. Add the herbs to the oil. You can either transfer the oil to a decorative bottle, or leave it in the original bottle that it was purchased in.
  2. Leave the herbs to steep in the oil for 7 days.
  3. Store. If you wish to strain the herbs and simply have clear oil, remove the herbs before storing. Otherwise, leave the herbs in the oil.
  4. Use. This olive oil is excellent used on pizzas, in salad dressings and in other savoury recipes that would normally take plain olive oil.

Tips
  • Use within 6 months of making and store in a dark, dry and cool place.

Things You'll Need
  • Decorative bottle, sterilised and dried, optional

This is to notify you that the above recipe MIGHT be a copyright infringement on Juniper M Russo Tarascio, better known as Jennifer, who operates a web site called "Bunny Tail Babies" and probably profits ENORMOUSLY from inconsequential herbal remedy videos selling supplements posted on the net, which by and large few people, if any, pay attention to. However, because Jennifer is decidedly a complete idiot you may be written to, threatened with loss of your web site and even jail and fines. Welcome to the real world of weird and strange humans.

Awesome info & much needed these days. It's a great way to save money from the high cost of buying it plus a much fresher product. I am going to try this out and will pass this recipe on to others.
thanks
